I ordered the simple house ramen and was honestly blown away by how perfect it was, despite how humble and functional the dish itself is. The broth was a shoyu ramen broth with a brown and slightly yellow colour. The texture was very smooth and fluid without any graininess, but on top there was a beautiful layer of tiny fat bubbles that gave every sip a soft richness. You cannot see the bottom of the bowl because of the colour, yet the broth still feels light and clear in the mouth. The seasoning was spot on, perfectly salted with a deep, rounded flavour that shows real skill and a very good understanding of balance in ramen. The noodles were exactly how I like them. The thickness, the length and the doneness were all perfect. Not too firm, not too soft, just cooked to the second so they kept a pleasant bite while still soaking up the broth. The toppings of fresh spring onion and bamboo shoots added a nice crunch and a gentle freshness that worked very well with the soup. The absolute highlight was the pork chashu. The quality of the meat was incredible. The fat and the meat almost melted together, with a tenderness that felt unreal. The flavour was full and rich, intense but never heavy or overwhelming. Every bite of chashu with broth and noodles filled the whole mouth with flavour and was simply perfect. The shop itself is quite functional and clearly designed so people can come in, eat and move on, but it still feels comfortable. The staff work quickly and efficiently, yet they are very kind, polite and genuinely helpful. You feel welcomed even though everything is set up for speed. For me this bowl was complete in every way. Because of the outstanding broth, the perfectly cooked noodles, the amazing chashu and the friendly, efficient service, I can only give this place 5 out of 5 stars and a very strong recommendation.

A little salty but otherwise fantastic and delicious. A fantastic first ramen experience in Japan. Staff speak a little English. Enough to point you to the water and ask you for noodle hardness.

Barikata noodles bouncy and chewy - love hakata style! Soup on the salty side but complements the noodles 5/5
